Bean salad

I tried some Carolina Caviar the other day, It was OK, but field peas aren't my favorite, so I mixed up this.

1 regular can of Garbanzos
1regular can of peas and carrots
1 regular can of whole kernel corn
A handful of chopped olives with pimento
enough Mayo to coat every thing
A hand full of three cheese mix (grated)
Salt and pepper to taste.
A generous shot of Tomato Bacon salad dressing

Drain everything, dump it in a bowl, add the remaining ingredients, fold together. Serve cold.

I would show you a colorful photo, but we ate it all.

Not yo' mamas chicken soup

Lunch today,

2 Cans chicken broth
4 breast fillets
4green onion bulbs and greens about 3 inches long
Lemon grass
Coconut milk
Pepper
Red pepper flakes
Dash of Terikyaki

Heat the broth, chop the onion and add to broth. Cube the chicken and add to the liquid, stir in enough coconut milk to whiten the broth. Add pepper and red pepper flakes to taste. Serve when the chicken is cooked.

Fishing again?

If the master of the sea allows, another trip Monday. More good things to eat.

Hopefully it will be better than the bash and splash trip last time.

Another new quick recipe,
One can seasoned tomatoes w/basil and oregano
One small jar artichokes in water
One small can of mushrooms in water
Some Old Bay Seafood Seasoning
Throw in some Shrimp or clams or fish chunks.
Heat until the seafood is cooked, serve over rice.

I grated some Asiago cheese over mine. Had it for the evening meal. Tasty.

Fish Stew


Fish Stew

Parsley
Two Cans Minced clams
One bottle clam juice
One pound sausage (andouille )
Two pounds shrimp, peeled
One pound chopped okra
One pound mixed peppers and onions
One pound Monk Fish, or equivalent
Two quarts tomatoes puree
Three small potatoes
Old Bay Seasoning
Salt
Pepper

Chunk the sausage and brown well, add veggies, salt and pepper, dice potatoes and cook together until all are done. Put the tomatoes, clams, clam juice in a large pot and bring to a boil or brisk simmer. Add the veggies and a couple tablespoons Old Bay to the tomatoes. Cut the fish into small chunks an inch thick. In a little olive oil sear the fish, then add it to the tomatoes, when the liquid returns to a simmering boil, add the shrimp and a couple tablespoons of fresh chopped parsley.

As soon as the shrimp is done serve


I fixed this today, idle hands in the kitchen, the Bride has given her approval. Made it up my own self.

New Recipe

I was watching food porn yesterday and got an idea for a filling comfort type food.

Dice three medium onions
Two cans chick peas
Two cans beef broth
One half pint cream
Salt
Course ground black pepper
Saute the onion until very soft, salt and pepper to taste,add broth and drained peas, heat through, or boil. Puree with hand blender. Add cream and mix throughly.
Serve in a cup or bowl with crutons and white cheese.
